Tonight's dinner is a Spicy Eggplant with Ground Beef and Tofu.  It's something like a mabo tofu.

Started with sesame oil heated on low heat to infuse the chili pepper, ginger and garlic then added the ground beef.  After browning the beef I added the chopped onions and Japanese long eggplant.  Stir it up and let it cook for a few minutes then throw some shoyu, mirin, vinegar, sake and water in.  Brought it up to a simmer then added the enoki mushrooms in.

After checking the taste, I slightly thicken the sauce with corn starch.  When the corn starch became thick I added the tofu in and gently stirred it. 

Finally, I served it on a bed of steamed rice and ate it while watching Hell's Kitchen and Master Chef!  Hahaha.  I knew it was going to be those two as the final two!
